Hops in Beer
Almost every beer brewed contains hops some more than others. Except for Gruit, which is a beer without hops.
Hops are used mainly for bitterness, flavour and aroma. This is done by adding them at different times and locations during the brewing process. Hops will also contribute to mouthfeel, foam & lacing, flavour stability & anti-microbial properties.
When looking for bitterness, add hops during the boil in the brewing process. They need to be boiled to release alpha acids, giving the bitter taste. The alpha acid rating on hops allows you to work out how much to use. The higher the alpha acid content the less amount of hops you will need to use.
Adding hops later in the brewing process will give more hop flavour. This is because you aren’t boiling off the delicate flavour and aroma compounds. Hop flavour and aroma are also significantly impacted by temperature.
Modern beer trends are seeing late whirlpool hopping at reduced temperatures. This is to get a massive juicy and fruit-forward hop flavour. Temperatures range from 60-85 degrees achieving some amazing results.

Lager Styles – Slovenian hop varieties & German Noble hops
IPA’s – American Hops (The biggest sellers for us are Citra, Simcoe, Mosaic, Amarillo, Cascade )& Australian Hops ( Galaxy, Vic Secret & Enigma )bring that fruit-forward hoppy punch
Belgian – Slovenian hops are a personal favourite of ours in this style, try Styrian Goldings
Porter/ Stouts – Whilst many suggest traditional English hops for these styles, we love Centennial in these beer styles.
