What is pH?
pH is the measurement of the concentration of free hydrogen ions in a liquid. The pH of pure water is 7. Liquids with a larger concentration of hydrogen ions than water are acid and have a pH value of less than 7. Liquids with a lower concentration of hydrogen ions, on the other hand, are base and have a pH value higher than 7. The pH scale runs from 1 to 14.
What effect does pH have on brewing?
The correct pH will help carry flavour and ensure optimal enzymatic activity, you need the correct temperatures for enzyme activity but it's also equally important to have the correct pH. Testing your pH levels will help you make better quality beer. Our tip for understanding pH is to take regular readings at different stages through the brewing process so you can really understand what's happening.
